Anette's Recipes with Liqueurs & Spirits
Apricot Mimosa
1 oz Apricot Liqueur
1 oz Apricot puree
Fill up with sparkling wine and serve on ice
Peach Mimosa
½ oz Peach Liqueur,
1 oz peach puree
Fill up with ice and sparkling wine, decorate with a slice of peach
Cherry Berry Cocktail
1 oz Cherry Liqueur
1 oz Kirsch (cherry spirit)
2 oz cranberry juice
Serve on ice
Sour cherries to decorate
Hot Hunters’ Tea
For 2 people, prepare half a litre of black tea,
add 1 cinnamon stick and 2 cloves, infuse with 30 ml (1 oz) Lady of the Cask wine brandy
and 15 ml Kirsch cherry spirit,
sweeten to taste with brown sugar.
Swiss style “Kaffee Kirsch”
Add 1 oz of Kirsch in your coffee (or hot chocolate) for a warm drink after a cold day.
Fancy Naramata Breakfast
Bake Blueberry pancakes,
sprinkle with Maple Liqueur,
serve with fresh Naramata fruit, Raspberries or cherries, some organic yoghurt
Golden Maple Cocktail
1 oz Maple Liqueur
1 oz Kirsch (cherry spirit)
2 oz apple juice (bag-in-a-box)
A splash of lemon juice,
Serve on ice
Decorate with a slice of apple soaked in Maple Liqueur
Sparkling Maple Apple Cocktail
1oz Maple Liqueur
2oz sparkling dry Apple Cider or Pear Cider
2oz Apple Cider
Splash of Soda Water
Slice apples and soak in Maple Liqueur, use as garnish.
Brandied hot Coffee
Add 1 oz of wine brandy “Lady of the Cask” to your coffee for a treat after playing in the snow. Serve hot and sweeten to taste. Garnish with whipped cream.
Canadian Tea
Enjoy as alternative to Blueberry Tea:
Add 1 oz of Maple Liqueur to a glass of fresh brewed Orange Pekoe tea or Green tea.
Canadian Kir Royal
Blend 1 oz of Cherry or Maple Liqueur with cold, dry sparkling wine, serve as aperitif in a flute glass, garnish with a spirited cherry or Maraschino cherry.
Peach inspired Mojito
2 oz Peach Liqueur
1 oz lemon juice
8 mint leafs,
A pinch of brown sugar
fill the glass up with soda water, decorate with slices of lime and a fresh mint leaf.
Maple infused hot chocolate
Heat up your favourite hot chocolate, add 1 oz Maple Liqueur, and serve with frothed milk.
Spirited Fruit Salad
Cut up some fresh crisp Okanagan apples, orange, banana, cherries, or any kind of fruit, add orange juice, maybe a teaspoon maple sugar, and serve with Cherry Liqueur or Maple Liqueur.
Grilled Pineapple
Cut a slice of not so ripe pineapple, soak it in Maple Liqueur for a couple of hours. BBQ the pineapple slice and serve it with ice cream.
Cheese Fondue
200 g Emmental cheese
200g Gruyere cheese
2 oz dry white wine
2 oz Kirsch (cherry spirit)
Melt the cheese; add white wine, some garlic, and the Kirsch. Serve with fresh baguette and dip fresh baguette slices in the cheese. Enjoy with a glass of Kirsch on the side!
Anette’s Black Forest Cake
– First bake a chocolate biscuit: Beat 6 egg whites. Then beat 6 egg yolks with 180 g sugar and 1 teaspoon vanilla until it turns creamy.
Carefully with a spoon, add stiff egg whites, add 80g flour, 60g corn starch, and 1 teaspoon baking powder, then 60g unsweetened cocoa. Mix carefully!
Bake at 350 F for 15 minutes on a large baking sheet (for 1 layer only).
– Spirited cherry pie filling:
Open a jar of sour cherries (pie cherries), drain the cherries. You can also defrost 1 kg pie cherries and drain them. Mix the juice (about 250 ml) with 30 g cornstarch and bring it to a boil. If there is not enough juice, I add some cranberry juice. Add 2 oz Kirsch and 1 Tbls sugar. Mix some cherries in and let it cool. Keep enough cherries for decoration.
– Beat 1 liter whipping cream with 3 tablespoon sugar, 2 oz Kirsch (Cherry Spirit), and 2 bags Dr Oetker “Whipit” if possible.
– For decoration, I like to use pie cherries that I harvested in July. I store them fresh in a mason jar covered with our cherry liqueur.
At least 4 hours before serving, you take the cold biscuit out and drizzle it with 3 oz Kirsch. Then spread the spirited cherry pie filling on it. Let it cool for an hour in the fridge (or cold place, safe from “predators”. Then spread half of the spirited whipped cream. The other half is for decorating the cake. Chocolate flakes can be used as well for decorating.
